Katz's Delicatessen has been on the corner of Houston and Ludlow since 1888 and is one of the last surviving Jewish delis of its kind in New York. The pastrami is hand-carved to order from whole briskets that have been brined, smoked, and steamed in-house — the curer's craft, unchanged for over a century. Get it on rye with mustard. The counter system involves a ticket you must not lose. The room is enormous, chaotic, and covered in signed celebrity photos. The corned beef is the secondary standard. When the cutter slides you a sample across the counter before the sandwich is finished, you are experiencing something genuinely irreplaceable.
