Ippudo landed on Fourth Avenue in 2008 and effectively started the conversation about ramen in New York, drawing waits that ran past two hours for most of its first years. The tonkotsu broth is the reason — pork bones cooked down until the liquid turns opaque and heavy, finished in the Akamaru Modern with miso paste and fragrant garlic oil. The Hirata pork buns arrived alongside it and have since been imitated across the country. The staff still shout a greeting at every entry, which is either charming or startling depending on the day. The waits have shortened. The broth has not changed.
