Noodletown sits at the corner of Bowery and Bayard with roast ducks hanging in the window, and for decades it has been the place cooks go after their own shifts end. The kitchen does Cantonese roast meats extremely well — the baby pig and the duck are the reason to come — but the salt-baked preparations, particularly soft shell crab in season, are what regulars order without looking at the menu. Seating is communal, the lighting is unsentimental, and no one is going to rush you or particularly attend to you either. It is cash only. Among the Chinatown institutions that have survived everything the last decade threw at them, this one has given up the least.
