Amanda Cohen opened Dirt Candy in 2008 with a premise that seemed contrarian at the time — a vegetable restaurant that is not a health restaurant, not a substitute for anything, and not apologetic about being expensive. The cooking is technically ambitious and frequently funny: broccoli given the Korean fried chicken treatment, carrots built into sliders, courses that get more mileage out of a single ingredient than most kitchens get out of a protein. Cohen also runs the place without tipping, with prices set accordingly, which she has been arguing for publicly for years. It is a tasting menu and it takes an evening. Give it one.
