Cho Dang Gol has been on 35th Street since 1996 and makes its own tofu daily, which is the entire premise and remains rare in New York. The soft tofu arrives still warm, served plainly with soy and scallion or built into stews, and the difference from packaged tofu is not subtle. The rest of the menu is careful home-style Korean cooking — jjigae, pancakes, braised dishes — with the full spread of banchan. Koreatown has churned through a lot of restaurants in three decades and this one has not needed to change, which says most of what needs saying.
