Cervo's is a slim room on Canal Street from the Hart's team, built around Iberian seafood cooking: head-on shrimp grilled hard and salted, tinned fish served with good bread, rice cooked in squid ink, plenty of vinho verde and sherry. The menu is short and changes with what came in. It is the kind of restaurant that works best at the bar with two or three plates and a bottle, and it has held its reputation for years without expanding or diluting the idea. The room is tight, the lighting is low, and the volume rises as the night goes.
