Carnitas Ramirez does one thing: Michoacán-style carnitas, pork simmered slowly in its own fat until the exterior crisps and the interior collapses, then chopped to order. You choose the cut — or order the surtido and get a mix of everything, including the parts that make the taco interesting. Tortillas are pressed in-house and the salsas are made with care. It is a small counter operation on East 3rd with a handful of seats, open late, and it has become one of the most reliably excellent cheap meals in Manhattan since opening. Order more than you think you need.
