Birria-Landia parked a truck under the 7 train on Roosevelt Avenue in 2019 and effectively introduced Tijuana-style birria to New York — beef stewed in chiles until it shreds, tucked into tortillas dipped in the rendered fat, griddled until the edges crisp, and served with a cup of consommé for dipping. The line formed almost immediately and has not really stopped. There is nowhere to sit; people eat standing on the sidewalk with a cup of broth balanced somewhere. It spawned a wave of imitators across the city, most of them worse. Go late, order more than four, and take the extra consommé.
