Bark Barbecue began with Ruben Santana smoking brisket on a makeshift rig in an Ozone Park garage, moved through the pop-up circuit, and now occupies a large flagship on Thames Street in Bushwick. Santana pairs Central Texas smoking technique with the flavors of his Dominican heritage, which shows up more in the sides and sauces than in the meat itself — the brisket is straight-ahead Texas, heavily peppered, rendered properly, with a serious smoke ring. It sells out, so posted hours are aspirational. It is one of a small handful of places in New York doing barbecue at a level that would be taken seriously in Central Texas.
