Fredrik Berselius runs Aska out of a converted warehouse under the Williamsburg Bridge, with a garden behind it supplying herbs and vegetables and a cellar bar underneath for before and after. The cooking is Nordic in method rather than in imitation — heavy on preservation, fermentation, and foraged material, with a restraint that can read as austere until a dish lands and the point becomes obvious. It has held two Michelin stars since 2017 and sits on North America's 50 Best list. The dining room is dark, spare, and quiet. This is the most serious tasting menu in Brooklyn and among the most serious in the city.
