Anna Klinger and Emiliano Coppa opened al di là on Fifth Avenue in 1998 and spent most of two decades refusing reservations, which generated a lot of standing on the sidewalk and a lot of loyalty. The cooking is specifically Venetian rather than generically Italian — beet ravioli dressed in butter and poppy seeds, braised rabbit over polenta, sardines and bitter greens — and it is done with a consistency that has outlasted most of what opened around it.
